The final stretch of exams is finally over and the finish line has been crossed. This is my last post of the year so I hope to make it a good one! This time I want to share a few of my favourite holiday recipes, some healthy some not - but in the end all delicious! While Ontario goes into lockdown this just may be the best time to try out some new cool things in the kitchen, who knows maybe you’ll find a hidden talent! To start off easy, some holiday cookies! These are my favourite by far because of their simplicity and how good they are to customize.
The recipe is simple and delicious! One of my favourite ways to customize the cookies is to slice up some apples and press them into the balls of dough on the prepared baking sheet and dust the cookies lightly with some cinnamon sugar before baking them. A fun holiday addition could be to crush up some peppermints or candy candes and roll the balls of dough in the dust before baking! These cookies are at the top of my to bake list because they’re chewy, crispy and hold up pretty well in a tin or in the freezer. Moving on to the main course! It’s warm, it’s flaky, it’s chicken pot pie!
This may be a slightly more challenging recipe but just as worth it for a nutritious filling warm meal! This chicken pot pie takes just as good piping hot and as cold leftovers, although I doubt there’ll be any left. I prefer not to have any peas in mine so instead I'll substitute for celery or leave them out entirely. If you’re feeling especially up to the challenge you could try and make your own pie crust as well! Just remember to double the recipe so that you can have a bottom and top crust. Another warm dish to satisfy someone who may be looking to try something a bit spicier and new is one of my all time favourites, kimchi stew!
This is not a recipe for the faint of heart! It’s challenging, spicy and maybe a bit unfamiliar to the taste buds but it’s one of my favourite winter dishes because it warms you up straight to the core! This recipe calls for mushrooms which I always leave out but once you get the hang of it, it’s pretty easy to make! Last but not least, some peppermint bark to round off the evening!
This is a super easy and delicious festive treat that would be great to give as a gift or eat for yourself! Peppermint bark is just as customizable as the cookies, where instead of peppermint candies other ones could be used instead. This is a treat that can be enjoyed all year round, with just a few minor adjustments to make it seasonally appropriate of course.
